The tale of Chenapoda’s creation is almost as colourful as the flavour that the product possesses. Its preparation allegedly came to existence by a mere mistake in a small town of Nayagarh in Odisha. A sweet maker in Gopalpur, sometimes identified as Sudarsan Sahoo, one day, ventured to use up remains of chhena or fresh cottage cheese. He added sugar, semolina and cardamom to the chhena and put it into an earthen pot coated inside with Sal leaves and put it into a baking oven fired with wood.
But the sweet maker left the pot in the oven and forgot about the pot, and thus left it there the whole night. The next day when he came back, he got a perfectly done dessert that had a lovely caramelised hue and a lovely barbeque smell. That, which could have been a burnt disaster, pleasantly evolved into the first-ever Chenapoda.
This ‘accident’ was very soon embraced and savoured by the people of the area. What was so appealing to people was the interior which was creamy and soft and the exterior which was a little burned and caramelized. People of Nayagarh heard of this new sweet and within a short span of time Chenapoda became the trending flavour not just in Nayagarh but in the entire state of Odisha.
Chenapoda has gone beyond being regional delicacy of Odisha and is now emblematic of Odisha’s creativity in food preparation. It is not confined to the state anymore and has become a darling of the sweet lovers within the territory of India and outside. That is why it is so loved when people talk about its invention: two chefs were experimenting and pouring ketchup randomly, and the best-selling product was created; every time when tasting it one receives the feeling that only the best things happen by accident.
The Unique Preparation Process:
Chenapoda is prepared in the traditional way with special reference to the preparation of fresh chhena. Tease out the process of mixing chhena with sugar, semolina, cardamom and sometimes a pinch of dry fruits and then slow-baking it in a clay oven lined with leaves.
